Carbone at Aria is Major Food Group's Italian-American restaurant imported from Greenwich Village to Aria — the Vegas outpost of the room UK visitors already know from NYC or Miami. Tuxedoed servers, red-sauce Italian-American classics elevated, the tableside caesar salad photo everyone has seen. The signature dishes are the spicy rigatoni vodka and the veal parmesan — order both.
